– 2 onions (coarsely chopped)
– 7–8 crushed garlic cloves
– 200g Bregano whole wheat or semolina pasta (boiled)
– 250g mushrooms (chopped with stems)
– 1 cup low-fat milk (or almond/oat milk for vegan)
– 2 tbsp semolina (sooji)
– 9–10 olives (pitted and muddled)
– Salt and black pepper to taste
– 1 tbsp olive oil
– Oregano and chilli flakes (to taste)
Step 1: Coarsely chop onions and crush the garlic cloves.
Step 2: Wash mushrooms and finely chop them along with the stems.
Step 3: Heat 1 tbsp olive oil in a deep pan. Add garlic and sauté until fragrant.
Step 4: Add chopped onions and cook until golden brown.
Step 5: Mix in mushrooms and sauté for 5 minutes until they release moisture. Season with salt and pepper.
Step 6: Stir in semolina and roast until slightly golden—it will absorb the moisture.
Step 7: Pour in milk slowly, stirring constantly to avoid lumps. Add oregano and chilli flakes.
Step 8: Let the mixture thicken into a creamy sauce.
Step 9: Add muddled olives, mix in the cooked pasta, and serve hot.
